We first introduce the various techniques traditionally used to handle various aspects of the production process. Then we raise some key issues, including how to use new technologies to achieve safe, feasible and highly reproducible food processing. Following that, we focus on several popular application platforms currently in use, including microwave processing, freeze-drying, photonic processing, hydrodynamic processing, chemical treatment and biotransformation. Finally we conclude with a summary of advantages and drawbacks when using different approaches in general food processing scenarios. Keywords: Food; Tobacco; Processing; Technology; Platforms
